Dark Chocolate Oatmeal Cookies

1 1/2 Cup all-purpose flour

1/2 Tsp. salt

1/2 Tsp. baking powder

1/2 Tsp. nutmeg

1/4 Tsp. Cinnamon

1/4 Tsp. Vanilla Extract

2 Sticks (16 oz) salted butter - softened

1 Cup packed light brown sugar

1 Cup granulated sugar

2 large eggs

3 Cups old-fashioned rolled oats

1 1/2 mini dark chocolate chips (70% cacao)

  1. Heat oven to 350 degrees. Line baking sheets with parchment paper.

  2. Whisk together flour, salt, nutmeg, cinnamon, and baking powder and set aside

  3. Using an electric mixer beat together butter and sugar at medium speed until light and fluffy (~ 2 minutes). Add in eggs one at a time, mixing until combined (~ 30 seconds).

  4. Reduce speed to slow and slowly add in the dry ingredients until combined. Add in Oats.

  5. Fold in chocolate chips with spatula. Careful not to over-mix.

  6. Bake for 20 minutes, rotating the pan halfway through. Looking for golden brown edges. Let cool for two minutes before transferring to wire rack to cool to room temp before serving!
