Peanut Butter Bars

For Bars:

1 Cup Peanut Butter

1 large egg

2/3 Cup maple syrup

1 Tbsp Cinnamon

1 Tsp Vanilla Extract

1 1/4 Cup oats

(Optional) For Glaze:

1 small jar of peach jam

1 1/2 Cup powdered sugar

Bars with final glaze!

  1. Heat oven to 350 degrees.

  2. Mix peanut butter, egg, maple syrup, cinnamon and vanilla with spatula

  3. Once mixed, add in Oats and stir until just combined

  4. Spread into a non stick cake pan. You are looking for about 1/2 height

  5. Bake for about 15 minutes or until edges start to crisp and brown

  6. Let cool on wire rack and sprinkle cinnamon on top for decor

If adding glaze:

  1. While bars are cooking whisk together jam and slowly add powdered sugar until thick.

  2. Let bars cool first and then pour glaze on top and freeze for 15 - 20 minutes uncovered, until bars and glaze harden
