Healthy Pumpkin Pie

We’ve arrived at the Holiday Season! Sugar rushes are bound to come around at some point. Heres a super sweet (pun intended) option that will leave you satisfied with ZERO guilt.

1 Pie Crust (I like the gluten free ones but any one will do)

1 15oz can organic pumpkin puree

2 large eggs

1 large egg white

1/2 cup almond or whole milk

1/4 cup maple sugar

1/4 cup coconut sugar

1 tsp vanilla

2 tsp cinnamon

1/2 tsp ground ginger

1/4 tsp nutmeg

1/4 tsp allspice

1/2 tsp salt

  1. Preheat oven to 350 degrees ; In a large bowl, mix puree, eggs, milk, syrup, sugar, vanilla, and spices until smooth / combined.

  2. Pour filling into pie shell

  3. Place on lower oven rack and bake for 55 minutes

  4. Let cool for 2 hrs before slicing

  5. Serve with whipped cream and enjoy!
